Vendakai avarai (ladies finger beans) recipe with tallow

A tallow based poriyal of ladies finger and beans by using tallow instead of oil. Based on a beans poriyal recipe.

This recipe focuses using tallow instead of oil for cooking.

I'm currently in a low carb, high fat, high protein diet (very close to keto diet). I’ve lot of tallow which I made from mutton fat. Also, ladies finger and beans. Hence I decided to modify a beans poriyal recipe made using copius amount of oil from Veni's easy cooking youtube channel and used it for making a ladies finger beans poriyal and substituing oil with tallow.

Using large quantities of tallow makes you feel full, but since tallow solidifies in room temparature, this dish has to be served hot or heated everytime it is to be eaten. Else, all the poriyal will freeze and stick to the pan.

Ingredients (3 servings):

  • Tallow 4 – 5 tsp.
  • Fried gram / kadala paruppu 1 – 2 tsp.
  • Mustard ½ tsp.
  • Cumin (Jeera) ½ tsp.
  • Garlic 4 – 6 cloves chopped
  • Onion 2 chopped small
  • Ladies finger about 10, chopped small (before chopping ensure that ladies finger is dry after washing it)
  • Beans around 20, chopped small
  • Green chilli 6 medium sized
  • Salt ½ tsp.
  • Turmeric powder ¼ – ½ tsp.
  • Chilli powder ½ tsp. (for extra spicy, make it 1 tsp.)
  • Curry leaves
  • Coriander leaves
  • (Grated coconut if necessary)

Preparation:

  • Heat tallow in high flame
  • Put mustard and let it burst
  • Put fried gram, chopped onions, curry leaves, green chilli and garlic cloves
  • Saute until onions turn a bit brown (takes sometime if there are lot of onions)
  • Put the chopped ladies finger and beans
  • Add salt, chilli powder and turrmeric powder.
  • Mix well
  • Cook for 10-30 mins (time depends on how much quantity is being cooked) and mix occationally.
  • Turn off stove and mix the coriander leaves.
  • Serve hot or heat before serving. Else tallow will solidfy and the entire poriyal will stick to the pan.

I ate 3 dosais and coconut chutney along with 1.5 servings of this poriyal and I felt extremely full. The feeling of fullness lasted until next day afternoon.
